1 cup canned chickpeas, drained2 Tbsp coconut oil

1 cup canned chickpeas, drained3 room-temperature eggs

1 cup canned chickpeas, drained1/3 cup mashed banana (1 small, ripe banana)

1 cup canned chickpeas, drained1 tsp alcohol-free vanilla flavor or vanilla extract

1 cup canned chickpeas, drained1/4 tsp salt

1 cup canned chickpeas, drained2 Tbsp Salba Whole Seeds

1 cup canned chickpeas, drained1/4 tsp baking powder

1 cup canned chickpeas, drained1/2 tsp ground cinnamon

1 cup canned chickpeas, drained1 Tbsp shredded coconut

1 cup canned chickpeas, drained2 Tbsp raisins, cranberries or blueberries (optional)

1 cup canned chickpeas, drained1/4 cup coconut flour

COOKING INSTRUCTIONS

§1 cup canned chickpeas, drainedPreheat oven to 400ºF. Mix together oil, eggs, banana, vanilla, and salt.

§1 cup canned chickpeas, drainedAdd coconut flour, Salba, baking powder, cinnamon, and shredded coconut, and whisk together until smooth.

§1 cup canned chickpeas, drainedFold in raisins. Other options include dried cranberries, blueberries, walnuts, cashews or cacao nibs.

§1 cup canned chickpeas, drainedPour into muffin cups greased with coconut oil.

§1 cup canned chickpeas, drainedBake 15 minutes or until toothpick inserted in center of muffins comes out clean. Cool on wire rack.
